 'The seduction begins with a whiff. Of garlicky
melted butter laced with Pernod. Of earthy wild mushrooms and black truffles soaked in the
juices of roasted monkfish. Of melted chocolate - bittersweet and intoxicating.
Then there are the vibrant flavors. A single bite of pearly white fish in lobster sauce that whisks us to a Mediterranean port. A butter-soaked potato layered with truffles that summons up a Perigord farmhouse. Asparagus risotto that's the essence of springtime.
Sounds are important here, too. Green apple match-sticks crunch in a foie gras Napoleon. Puff
pastry crackles. Berries pop. And soufflés whoosh softly when pierced with a spoonful of crème anglaise.
